Smoked salmon nigiri with green asparagus

Ingredients for 3-4 persons:

PROCEDURE:

First, we clip and steam the asparagus.
We wash the rice as many times as the water turns transparent.
Then we put the rice in a pan with cold water, cover it with a lid and light the fire. When the water starts boiling, we lower the flame and let the rice cook for 15 minutes. Then we let it cool for 10 minutes.


In the meantime, we warm the vinegar with water and salt.
We put together this mixture and the rice and blend it. Now we transfer it in a glass bowl that we cover with some wet parchment paper.


We give the shape to the rice by putting it in a squared pan and flatten it with wet hands.
We squash the salmon as well and put it on the rice.
We finally cut the rice with a wet knife in small rectangular cuts and obtain the nigiris.

CONCLUSION:

We plate the nigiris and add the cheese on top with the help of a sac a poche.
On top of each cut we put an asparagus.


With the help of a fork, we mix the mustard, oil and dill and decorate the dish with this sauce.
