Risotto with “pisto” from Grandma Elsa

Grandma Elsa, born in 1935 in Villimpenta (MN).
This is the special recipe of our festive days and Sundays. The original name of the dish is "Risotto alla Pilota", a typical Risotto from Mantua, very tasty and spicy, best matched with a glass of Lambrusco wine.
Procedure:
Put the water and the Rice with a pinch of salt in a pot, light the fire and wait until it boils.
In the meantime, in a pan, cook the pisto and add herbs like rosemary and sage and a knob of butter (if you prefer you can use extravirgin olive oil).
When the pot with Rice boils, cover it with a cotton rag and put the cover on top. leave the pot away from the fire for 20 minutes.
Final step:
Blend the Rice (it will appear grainy), add the meat and the grated cheese.
