Rice Supplì "Al Telefono"

Procedure:

First we prepare a Risotto with the meat sauce as we usually do. 

The grain has to be “al dente” and the Risotto not so creamy.

Then we roll it out on a baking tray to cool it down, or, if we have a blast chiller, we can put the Risotto to a fridge temperature.

In the meantime we cut the Mozzarella into cubs: this will be the refill of our supplì.

How to realize the Rice Supplì: we take a handful of quenched Risotto in our hand and put in the middle of that a cube of Mozzarella; we close it as a cylinder, the typical tapered shape of a Roman supplì.

After this, we coat the mixture in breadcrumbs and fry it.

Final step:

The supplì is ready when its colour is golden.

Place the supplì on a paper towel to drain the oil. Let them cool and serve.
