Rice balls in the air fryer

Let’s cook the rice in salted boiling water for about 14 minutes.
In the meantime, we cut the eggplant into cubes, hot a non-stick pan and put in oil and the garlic. We add the eggplant and cook it by adding water to keep it soft. Once cooked, we salt it and let it cool.
Now we mix the rice together with tuna, mint, egg, parmesan and the eggplant.
We give it a ball shape and we dip it in the breadcrumbs. We cook it in the air fryer for about 20 minutes at a temperature of 200°c.
We can serve the rice balls with a light mayonnaise like yogurt mayonnaise or vegetal mayonnaise.
